Watermelon Recipes
Summers are here and thank god, so are sweet watermelons. There are lot of benefits for eating watermelon during summers. It keeps us hydrated, works as an antioxidant and helps you lose weight faster. Watermelon Toast is the new Avocado Toast this summer.
I have paired watermelon recipes with zucchini, burrata cheese, blueberries – all of these Watermelon recipes can be served for breakfast, salads or dessert.
How to select a Watermelon:
1. Big or small, it should be heavy for its size
2. Look for a yellow spot – it means it is ripe.
3. Thump it to hear a deep hollow sound.
Once you find the right watermelon slice it from the top instead of middle, since we want slices for the watermelon toast. You can cut rectangle shapes from the slices and use the other pieces of watermelon to make a fresh juice .
Watermelon with Zucchini noodles:
I know cucumber goes well with watermelon, wasn’t sure if zucchini would do that much justice. But oh boy, it not only tastes good – it looks even better.

Ingredients:
1. Long Zucchini
2. Almond flakes
3. Parmesan cheese
4. Pesto
5. Olive oil
6. Spiral slicer
7. Salt to taste
How to make it:
Zucchini noodles – Heat the olive oil, roast almonds for two minutes. Add a bit of pesto. Sprinkle some parmesan cheese. Add salt. Don’t add a lot. Take it off the stove and now add your zucchini noodles and stir. Put it on the watermelon toast. Garnish with pomegranate and almond flakes.
Watermelon with Feta cheese:
Generally I use Feta cheese. The soft textured cheese blends very well with watermelon.
Feta is generally easily available and one can never go wrong with Feta and watermelon. Its always a good idea to use your personal favourite cheese.
Ingredients:
1. Feta cheese
2. Alfafa sprouts
3. Balsamic vinegar
4. Mint leaves
How to make it:
Scramble the Feta cheese and sprinkle it on the watermelon slice. Add chopped mint leaves to the cheese. Put Alfafa sprouts on the top. Garnish with balsamic vinegar. Salt to taste.
Watermelon with Cream Cheese and Blue berries/ Strawberries
Paste some cream cheese on the watermelon toast. You can add sugar to the cream cheese if you like. Arrange blueberries/strawberries and garnish with chocolate sauce. Eat for breakfast or dessert!
